Ground Beef with Mushrooms & Chives
This meal comes together quick and easy. It’s the perfect weeknight dinner with minimal ingredients.
Ground Beef with Mushrooms & Chives

Ingredients
- 2 tbsp olive oil
- 1 lb grass-fed ground beef
- 1 onion, chopped
- 2 garlic cloves, minced
- 8 oz roughly torn mushrooms
- chives for garnish (and chive blossoms if accessible)
Instructions
- Heat skillet on medium heat then add olive oil and beef. Break up the ground beef and season well with salt and pepper.
- Add in the chopped onions and continue to cook with the beef
- When the meat is cooked, add in the mushrooms and garlic and cook for an additional 4 minutes.
- Serve the beef over rice, a sweet potato, or with a side salad. garnish with chives.
