Ground Beef with Mushrooms & Chives

Ingredients

  • 2 tbsp olive oil
  • 1 lb grass-fed ground beef
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 8 oz roughly torn mushrooms
  • chives for garnish (and chive blossoms if accessible)

Instructions

  • Heat skillet on medium heat then add olive oil and beef. Break up the ground beef and season well with salt and pepper.
  • Add in the chopped onions and continue to cook with the beef
  • When the meat is cooked, add in the mushrooms and garlic and cook for an additional 4 minutes.
  • Serve the beef over rice, a sweet potato, or with a side salad. garnish with chives.
