Blueberry Peach Crumble

This crumble is a great way to enjoy summer blueberries and peaches. It’s gluten free and full of healthy ingredients. Sweetened with a touch of maple, it’s the perfect summer treat that is both satisfying and refreshing.

I like adding plenty of healthy fats to this dessert using grass-fed butter and walnuts to balance out the sweetness from the fruits, making it more blood sugar friendly.

Blueberry Peach Crumble

Ingredients

  • 3 cups wild blueberries
  • 2-3 peaches sliced
  • 1 cup sprouted oats
  • 1/2 cup + 2 tbsp almond flour divided
  • 1 cup chopped walnuts
  • 1 tsp cinnamon
  • 3/4 tsp salt
  • 2 tbsp pure maple syrup
  • 8 tbsp cold grass-fed butter

Instructions

  • preheat the oven to 350 F
  • add the peaches and blueberries to an oven safe dish and mix in 2 tbsp of almond flour
  • in a bowl, mix together the oats, almond flour, nuts, cinnamon, salt, baking powder. then mix in the maple syrup.
  • chop up the cold butter then add it to the bowl. Use your fingertips to mix in the butter. breaking the butter into tiny pieces as you do so.
  • put into the oven and bake for 40-45 minutes until the crust is golden and crispy and the berries are bubbling.
  • serve with vanilla ice cream. My favorite is Straus
