Dutch Oven Dill Chicken
This recipe is so easy and so good—it’s my go to chicken dinner. The chicken comes out incredibly tender and juicy. With minimal ingredients and hands-on time, it’s an easy meal for any night. Using high-quality meat from pasture raised chickens significantly improves the tenderness and flavor of this slow-cooked chicken.


Dutch Oven Dill Chicken
Ingredients
- 2-3 lbs bone in chicken thighs or legs pasture raised
- salt and pepper
- olive oil
- 1 tbsp dried dill or 1 cup of fresh dill
- 2 cups filtered water
Instructions
- Preheat the oven to 325 F
- Place the chicken in a dutch oven skin side up and generously salt. Add pepper and Dill
- Add a few glugs of olive oil. Then, pour in the water until the chicken is half-way submerged
- Put the lid on and bake in the oven for 2.5-3 hours until chicken shreds easily.
- Serve with cooked vegetables, a fresh salad, or over bone broth rice. And make sure to spoon over some of that delicious, collagen rich cooking liquid you just created!
