Dutch Oven Dill Chicken

This recipe is so easy and so good—it’s my go to chicken dinner. The chicken comes out incredibly tender and juicy. Using high-quality meat from pasture raised chickens significantly elevates this meal.

Dutch Oven Dill Chicken

Ingredients

  • 2-3 lbs bone in chicken thighs or legs pasture raised
  • salt and pepper
  • olive oil
  • 1 tbsp dried dill or 1 cup fresh dill
  • about 2 cups chicken bone broth or filtered water

Instructions

  • Preheat the oven to 325 F
  • Place the chicken in a dutch oven skin side up and generously salt. Add pepper and Dill
  • Add a few glugs of olive oil. Then, pour in the broth until the chicken is half-way submerged
  • Put the lid on and bake in the oven for 2.5-3 hours until chicken shreds easily.
  • Serve with cooked vegetables, a salad, or over rice
