Cottage Pie with Butternut Squash Topping
For the Filling
- 2 tbsp animal fat (butter, lard)
- 1 medium onion finely chopped
- 2 medium carrots finely chopped
- 2 celery stalks finely chopped
- 4 garlic cloves minced
- 1 lb ground beef
- 1 lb ground italian sausage
- 10 chicken hearts minced
- 4 anchovy fillets
- 2 tbsp flour or other starch for thickening
- 1/2 cup chicken meat stock
- 1 tsp salt
- grate of 1/2 a nutmeg
Butternut Squash Topping
- 1 small butternut squash
- 1 tsp salt
- a small grate of nutmeg
- 1/2 cup raw cream
- 1/2 cup parmigiano reggiano
